Platinum Recruitment is working in partnership with a 4-star standard country house hotel set in a stunning Grade II listed building in the Surrey countryside, near Dorking, and we have a fantastic opportunity for a talented Pastry Chef de Partie to join their team.

Set in the picturesque Surrey countryside, near Dorking, our client is a popular country house hotel with perfectly manicured gardens. The hotel has a roaring C&B trade, catering for weddings, conferences and special events for up to 250 covers.
The main restaurant is open for both breakfast and dinner and offers diners an array of mouthwatering modern British meals from their a la carte menu. Dishes are made using locally sourced produce. A typical Saturday evening can see the restaurant cater for 100 covers or more whilst a separate all-day dining menu runs from the bar area, offering guests a selection of lighter meals and snacks.
The afternoon tea trade here is becoming increasingly popular, with a selection of savoury and sweet treats offered.
The hotel has good public transport links with a bus stop at the end of the driveway too.

What’s involved?
As a passionate chef with previous pastry experience, the Pastry Chef de Partie will work alongside the hotel’s Pastry Chef, ensuring the smooth running of the pastry section. Working to recipes provided, you will be responsible for the production of bread, pastry, and dessert items for the hotel, ensuring the highest standard of preparation and presentation every time.
You will be an organised and creative individual with a keen eye for detail when it comes to plating and presentation. You will weigh and measure ingredients to ensure exceptional quality and consistency, and will be a great communicator with the ability to work closely with the wider kitchen team in order to deliver dishes in a timely manner.
Ideally, the successful Pastry Chef de Partie will have worked to a 1 AA Rosette level or equivalent previously.
